- Manual harvest when the right state of ripeness is reached.
- Press destemming in automatic temperature-controlled winemakers.
- Alcoholic fermentation with spontaneous yeasts present on the skin and without added sulfites at different temperatures to have the optimal extraction of aromatic substances, color and tannins.
- Several daily cycles of processing the skins to have optimal extraction of the natural potential of the grapes.
- At the appropriate time racking and pressing.
- For quite some time, processing is carried out to improve the roundness and complexity of the wine.
- Natural malo-lactic fermentation part in ceramic barrels is also completed during this period.
- After racking, again without the addition of sulfites, the wine remains in the ceramic barrels on the fine lees for several more months for natural cold aging and physical stabilization.
- Before bottling, blending is done, bottled without filtration, so slight deposits may be present.
